Ingredients:
· 350g washed, peeled and cut sweet potatoes
· 2 tbsp olive oil
· 1/2 tsp sea salt/Himalayan salt
· 1/2 tsp of ground pepper
Instructions:
1. Pre-heat the oven to 180C/356F/gas mark 4.
2. Prepare a large baking tray with baking paper or foil and place the sweet potato chips and drizzle over the olive oil and season with the salt and freshly ground black pepper. Toss well to coat, then roast in the oven for 20–30 minutes, or until the sweet potato chips are crisp and golden-brown.
3. Sprinkle with herbs and serve immediately with homemade beetroot hummus or any sauces.
