Yield: 4 servings

Ingredients:

·       4 cups of pasta

·       8 cups of water

·       6 tbsp olive oil

·       5 tbsp all purpose flour  

·       4 cups of plant milk  

·       ½ cup nutritional yeast  

·       ½ tsp salt

·       ¼ tsp pepper

Instructions:

1.     Boil the water (with a pinch of salt and/or olive oil) in a large pan. Once boiling add the pasta and cook for 8-12 mins or until soft. Drain and leave to steam dry for a few mins, just until the surface of the pasta looks matte.

2.     To prepare the creamy “cheese”, pour the olive oil to a pot on the stove and turn the heat to medium high

3.     When the oil begins to heat up, add the flour and stir continuously otherwise lumps will appear, then add in all the milk at once. This should take around 2-5 minutes as the sauce thickens.

4.     When it has reached the desired thickness remove from the heat (bear in mind that it will continue to thicken as it cools).

5.     Stir in the nutritional yeast, salt and ground black pepper. The nutritional yeast is what creates this cheesy texture without this it wont really taste the same.

6.     Taste test and see how you like it. If you want to intensify the flavours, add in the onion powder and garlic powder.

7.     Mix the pasta and the sauce together and serve with your preferred toppings and add some herbs, I chose dill. 😊
