Ingredients:

·       2 cup/ 20 pitted Medjool dates (soaked in warm water over night)

·       1 cup raw nuts, almonds, walnuts, pecans etc

·       1 pinch of salt

·       2 cups unsweetened shredded coconut

Instructions:

  1. Take the dates, nuts and salt in a food processor fitted with the S-shaped blade. Process until mixture is well combined until sticky.

  2. Scoop the dough by using a tablespoon, then roll between your hands to form balls.

  3. Arrange them on a baking sheet or a plate then roll them into a bowl filled with unsweetened coconut.

  4. Place in the fridge or freezer to set for at least 30 minutes before serving. Store the balls in a sealed container in the fridge for up to a week.
