Ingredients:

·      1 broccoli cut into florets  

·      1 onion

·     2 garlic cloves (chopped)

·     1 cup vegetable stock

·     2 cups coconut milk

·     2 tbp coconut oil

·     1 tsp salt

·     ¼ tsp black pepper

 Instructions:

1.           Heat the coconut oil in a saucepan on a medium heat. Add the onion and garlic and cook for 7-10 minutes until golden brown and soft.

2.           Add the broccoli, stock and coconut milk. Season to taste.

3.           Simmer for 15-20 minutes.

1.           Blend until smooth, using either a hand blender or blender and enjoy!
