Yield: 10-12 servings

Ingredients:

  • 2 cups almond flour

  • 3 overripe bananas

  • 2 eggs, including the vegan options listed above or 2 flax eggs

  • 1 tbsp baking powder

  • 3 tbsp maple syrup

  • 1/2 tsp salt

  • 1/2 tsp pure vanilla extract

Instructions:

  1. Grease or line a 9×5 loaf pan. 

  2. Preheat oven to 191 C/325 F/Gas mark 5. 

  3. Stir all ingredients until smooth, top with chocolate chips, nuts or fruit. (optional)

  4. Pour into the loaf pan and bake for 55-60 minutes. Let it sit until completely cool before taking it out the tin.

  5. Refrigerate leftover up to 6 days, or slice and freeze for a rainy day. Enjoy!
