Ingredients:
2 cups almond flour
3 overripe bananas
2 eggs, including the vegan options listed above or 2 flax eggs
1 tbsp baking powder
3 tbsp maple syrup
1/2 tsp salt
1/2 tsp pure vanilla extract
Instructions:
Grease or line a 9×5 loaf pan.
Preheat oven to 191 C/325 F/Gas mark 5.
Stir all ingredients until smooth, top with chocolate chips, nuts or fruit. (optional)
Pour into the loaf pan and bake for 55-60 minutes. Let it sit until completely cool before taking it out the tin.
Refrigerate leftover up to 6 days, or slice and freeze for a rainy day. Enjoy!
